Soba is buckwheat noodles, a local dish that is widely known in Izumo.
Types of Izumo Soba
There are two basic types of noodles available: kamaage soba, which is served hot, and warigo soba, served cold in a neat sort of graduated bowl-tower.
How to enjoy Izumo soba
Warigo-soba is usually served in a three-tier serving bowl together with a variety of toppings.
You add extra soba sauce (soba tsuyu) in the bowl when you eat kamaage soba.
Sake Izumo is said to be the birthplace of sake.
Saka Shrine worships the god of sake brewery "Kusunokami" (久斯之神). According to "Izumo no Kuni Fudoki" (出雲国風土記), it is written that gods gathered here to make sake and enjoyed drinking it. That's why Izumo is said to be the birthplace of sake.
Sake is made from fermented rice.
The foundations of making good sake are quality rice, clean water, koji mold and yeast.
These ingredients are combined and fermented in precise processes that have been refined over centuries.
How to enjoy sake
Sake can be found at most establishments serving alcohol, especially at restaurants and drinking establishments such as izakaya and bars.
Sake pairs well with almost any kind of food but compliments the delicate flavors of traditional Japanese meals particularly well.

Some varieties of sake are Izumo Fuji (出雲富士), Tenon (天穏), Jujiasahi (十旭日), Yamasan Masamune (ヤマサン正宗).
